Oklahoma Smash Burger
Dic Ann’s Oklahoma Smash Burger
Sam Di Tommaso
Makes 1 burger
1 brioche bun
Dic Ann’s mayo
1 handful of thinly sliced onion
100 g chuck roast or ground beef brisket (form into a ball)
1 slice of orange medium cheddar cheese
1 tsp butter
1 jar of Dic Ann’s sauce
1. In a skillet (cast iron preferably) over high heat, melt the butter.
2. Once the butter has melted, add a handful of thinly sliced onion, place the ball of ground meat on top and smash it with a flat, heavy object (ONLY ONCE) until the patty is about 1/4” thick, and let it sear until the onion is fried.
3. Meanwhile, turn on a second burner with a second pan over medium heat. Brush only the inside of the hamburger bun with the Dic Ann’s mayo and toast only the inside.
4. Flip the patty, place a slice of cheese on top and let it melt.
5. Place the patty in the hamburger bun, dip the burger in the Dic Ann’s sauce that you have warmed up beforehand and enjoy.
N.B. You can garnish the burger as you like (e.g. pickles, mustard, etc.)
N.B. #2 chuck roast or beef brisket gives you a 70/30 meat-to-fat ratio, which makes for a juicier burger
